Pre 1960s, Speyside distilleries topped off their fires with local peat when coal stock was low, yielding a balanced single malt with a twinge of smoke; commercial maltings basically killed this tradition. When Gordon & Macphail bought the distillery in 1993, they resurrected the style and continue to employ Chapeltown Springs water from the
