2023 Eleni & Edouard Vocoret Montee de Tonnerre, Chablis Premier Cru, France Ribera del Duero Fermentation: Long and Low temperaturesMonte de Tonnerre sits on the right bank opposite the Grands Crus, with thin clay over Kimmeridgian limestone and southeast exposures that deliver intensity and cut. The Chardonnay is hand harvested, gently pressed, and fermented with native yeasts, then raised on fine lees in stainless steel with a small share in seasoned barrels, avoiding new oak to preserve precision.
